Put some Red, White and Blue in your mouth this 4th of July

I’m dreaming of paletas this 4th of July. For me, the 4th always means food in red, white and blue. Last year? Blueberry and strawberry shortcake. Year before? Patriotic Jello. This year? I’m going for a red, white and blue popsicle. And “paleta” is the spanish word for popsicle, but usually made with very little sugar, and a whole lot of fruit. Stay tuned for how this one turns out. I think it will require some patience. But is there anything more patriotic than putting some red, white and blue in your mouth on the Fourth of July? See? I didn’t think so.

Back in the late 80s when the Supreme Court was hearing the flag-burning cases, I did a sheet cake for July 4. Chocolate sheet cake with vanilla buttercream frosting. Tons of blue and red food coloring to make the star field and the stripes. And then, at just the right moment, we doused it with Bacardi 151 and lit it up. It flamed briefly, caramelized oh-so-slightly, and was utterly yummy.
Not to mention 100% Constitutional!

Now that I think about it, I have a photo of that cake (well, a photo of me saluting it) … need to scan that sucker and put it up on flickr or someplace.
